The Ultimate Weeknight Fried Rice: A 20-Minute Dinner Hero
There's something magical about fried rice. It's the dish that saved me on countless busy evenings when the fridge looked empty and takeout tempted me. With just a few humble ingredients and a hot wok, you can transform yesterday's leftover rice into something golden, savory, and utterly irresistible. This is the recipe I make when I want comfort fast — and I promise it will become your weeknight hero too.
Ingredients
- 3 cups cooked rice, preferably day-old and chilled
- 2 tablespoons vegetable oil
- 2 large eggs, lightly beaten
- 1 cup frozen peas and carrots mix
- 3 green onions, sliced (whites and greens separated)
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon oyster sauce (optional)
- Salt and white pepper to taste
Instructions
- Heat 1 tablespoon of oil in a large wok or skillet over high heat. Pour in the beaten eggs and scramble quickly until just set. Remove and set aside.
- Add the remaining oil to the wok. Add the whites of the green onions and garlic, stir-frying for 30 seconds until fragrant.
- Add the peas and carrots and stir-fry for 2 minutes until tender.
- Add the chilled rice, breaking up any clumps with your spatula. Stir-fry for 3-4 minutes until the rice is hot and slightly toasted.
- Drizzle in the soy sauce, sesame oil, and oyster sauce. Toss everything together until the rice is evenly coated.
- Return the scrambled eggs to the wok, add the green onion tops, and season with salt and white pepper. Give it one final toss and serve immediately.
Chef's Notes & Tips
- Day-old rice is key — fresh rice steams instead of frying. Spread freshly cooked rice on a tray and chill for 30 minutes if you're in a hurry.
- Keep your heat high and don't overcrowd the pan, or the rice will steam rather than fry.
- Have all ingredients prepped and within arm's reach before you start — fried rice moves fast!
I hope this fried rice brings as much joy to your table as it does to mine. Give it a try tonight, tweak it to your taste, and don't forget to share your golden creations with friends and family — the best meals are the ones we pass along.
