The Ultimate Seafood Paella Recipe: A Taste of Spain

Paella is more than just a dish; it's a vibrant celebration that captures the essence of Spanish culture. Whether enjoyed at a bustling seaside restaurant in Valencia or crafted in your own kitchen, this rice-based meal is a feast for the senses. With its alluring colors and rich flavors, paella invites everyone to gather around the table and share in the experience. Today, we’ll take a journey to replicate this iconic dish with fresh seafood that’ll transport you straight to the Mediterranean.

Ingredients

  • 2 cups Bomba rice (or any short-grain rice)
  • 4 cups seafood broth
  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned
  • 1 lb calamari, sliced into rings
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup peas (fresh or frozen)
  • 1 tsp smoked paprika
  • 1/4 tsp saffron threads
  • 4 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Prepare the Broth: In a pan, heat the seafood broth and infuse with saffron by letting it steep on low heat.
  2. Cook the Base: In a large paella pan or skillet, heat olive oil over medium heat. Add onions and garlic, cooking until translucent.
  3. Add Vegetables: Stir in the red bell pepper and cook for another 3 minutes until softened.
  4. Incorporate the Rice: Pour in the Bomba rice and smoked paprika, stirring well to coat the grains.
  5. Add the Broth: Gradually pour in the hot seafood broth. Stir gently, then increase the heat to bring to a simmer. Do not stir once simmering!
  6. Layer the Seafood: After 10 minutes of cooking, add shrimp, mussels, and calamari evenly over the rice. Sprinkle with peas, then cover the pan with a lid or aluminum foil.
  7. Let it Cook: Reduce heat to low and let the paella cook for another 10-15 minutes, or until the rice has absorbed all the liquid and the seafood is cooked through.
  8. Rest the Dish: Remove from heat and let it sit, covered, for 5 minutes. This allows the flavors to meld beautifully.
  9. Garnish and Serve: Fluff the rice with a fork, garnish with fresh parsley, and serve with lemon wedges for an extra zing.

Gather your loved ones, pour a glass of Spanish wine, and dig into this ultimate seafood paella. With each bite, you’ll savor the warmth of the sun-soaked shores of Spain, making every meal a special occasion!
