Easy One-Pot Beer Beef Stew Recipe (Weeknight Winner!)
Weeknights can be chaotic, can't they? Between work, school runs, and everything in between, the last thing you want is a mountain of dishes. That's exactly why I adore this one-pot beer beef stew—it's fuss-free, deeply flavorful, and cleanup is a breeze. Everything comes together in a single Dutch oven, and the beer does double duty as both a tenderizer and a flavor bomb. The first time I made this, my family scraped their bowls clean and asked for seconds before I'd even sat down. Let's get cooking—you've got this!
Ingredients
- 2 lbs (900g) beef stew meat, cubed
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons flour
- 1 cup (240ml) beef stock
- 1 bottle (12 oz / 355ml) lager or pale ale
- 1 tablespoon Worcestershire sauce
- 4 carrots, chopped
- 3 potatoes, cubed
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Heat the oil in a large pot over medium-high heat and brown the beef on all sides, about 5 minutes. Remove and set aside.
- Add the onion to the pot and cook until soft, about 4 minutes. Stir in the garlic.
- Sprinkle in the flour and stir for 1 minute, then pour in the beef stock, beer, and Worcestershire sauce.
- Return the beef to the pot, add the rosemary, and bring to a boil.
- Reduce the heat, cover, and simmer for 1 hour.
- Add the carrots and potatoes and simmer uncovered for 30 minutes more, until tender.
- Season to taste and serve hot with crusty bread.
Chef's Notes & Tips
- Prep ahead: Chop your veggies the night before to make the actual cooking feel effortless.
- Use a lager or pale ale: These give a milder, crowd-pleasing flavor that even beer skeptics will love.
- Thicken if needed: A small cornstarch slurry (1 tablespoon cornstarch + 2 tablespoons water) will do the trick.
- Freezer-friendly: Portion leftovers into containers and freeze for up to 3 months.
See? Weeknight dinner doesn't have to be complicated to be absolutely delicious. I'd love for you to give this one-pot wonder a try and see just how easy comfort food can be. When you do, share it with someone you love—and maybe send me a note about how it turned out. You're going to nail it!
