Classic Egg Fried Rice Recipe: Better Than Takeout In 15 Minutes
Some dishes taste like home, and for me, egg fried rice is that dish. My grandmother made it in a battered old wok, humming while the eggs sizzled and the kitchen filled with the scent of soy and sesame. It's simple, honest food — the kind that asks for nothing fancy yet delivers pure comfort. Today I'm sharing her classic recipe so you can bring that same warmth into your own kitchen.
Ingredients
- 4 cups cold cooked long-grain rice
- 3 large eggs
- 3 tablespoons neutral oil
- 2 green onions, finely chopped
- 2 tablespoons light soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
Instructions
- Whisk the eggs with a pinch of salt until smooth. Heat 1 tablespoon of oil in a wok over medium-high heat and scramble the eggs until softly set. Transfer to a plate.
- Add another tablespoon of oil and the green onions, stirring for 20 seconds until fragrant.
- Add the cold rice, pressing and tossing to separate the grains. Fry for 4-5 minutes until heated through and lightly golden.
- Drizzle the soy sauce and sesame oil around the edge of the wok so it sizzles, then toss to coat the rice evenly.
- Fold the eggs back in, season with salt and white pepper, and toss for another minute.
- Serve hot, garnished with extra green onions.
Chef's Notes & Tips
- Use long-grain rice like jasmine for the fluffiest texture.
- Drizzle soy sauce around the hot rim of the wok, not directly on the rice, for a deeper toasted flavor.
- Don't over-scramble the eggs — pull them off while still glossy so they stay tender.
There's a special kind of satisfaction in making takeout-style food at home, and I'd love for you to feel it too. Cook this up for someone you love, snap a photo of your masterpiece, and share the recipe far and wide — good food is meant to be shared.
