Healthy Overnight French Toast Casserole: A Make-Ahead Morning Hero
Mornings are busy, and sometimes the last thing you want to do is stand at the stove flipping slices one by one. Enter the overnight French toast casserole — a make-ahead marvel that does all the work while you sleep. You assemble it the night before, let the bread soak up a lightly sweetened custard, and simply bake it in the morning. This version keeps things a little lighter with whole-grain bread, less sugar, and a boost of warm spices, but it's every bit as comforting as the classic. Perfect for holidays, brunches, or just a stress-free weekend.
Ingredients
- 8 cups cubed whole-grain or sourdough bread (about 10 slices)
- 4 large eggs
- 1 1/2 cups milk (or a mix of milk and Greek yogurt for extra protein)
- 2 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- 1 tablespoon butter, for greasing
- Fresh berries and a light dusting of powdered sugar, for serving
Instructions
- Grease a 9x13-inch baking dish with butter and spread the bread cubes evenly inside.
- Whisk the eggs, milk, maple syrup, vanilla, cinnamon, nutmeg, and salt in a large bowl.
- Pour the custard evenly over the bread, pressing gently so every cube soaks.
- Cover and refrigerate overnight (or at least 4 hours).
- In the morning, preheat the oven to 350°F (175°C) and let the dish sit at room temperature while it warms.
- Bake uncovered for 35–40 minutes, until puffed, golden, and set in the center.
- Let cool for 5 minutes, then top with fresh berries and a light dusting of powdered sugar.
Chef's Notes & Tips
- Use sturdy bread: Whole-grain or sourdough holds up better than soft white bread overnight.
- Don't skip the rest: The overnight soak is what makes it custardy and delicious.
- Add protein: Swapping half the milk for Greek yogurt makes it creamier and more filling.
- Freezer-friendly: Assemble and freeze unbaked for up to 2 months — just thaw overnight before baking.
This overnight casserole is my favorite way to make mornings feel effortless and special at the same time. Assemble it tonight, wake up to a warm, cinnamon-scented kitchen, and enjoy a breakfast that practically made itself. I'd love to hear how you top yours — berries, nuts, a drizzle
